卤鸡汁 :鸡汤两杯,玫瑰露酒一杯,老抽一杯,清水一杯,卤包一份(内有胡椒粒,丁香,香叶,桂皮,八角,甘草,草果),姜数片,蒜数粒,葱一把,冰糖三大匙。全部卤料烧开后转小火熬煮三十分钟。

做法 :将鸡浸入卤汁里,转中火烧开后立即熄火, 将鸡翻身,浸泡十分钟;重新开火,烧开后再次熄火,翻身,浸泡十分钟;再重复一次即可捞起。
